Dry your tomatoes - I use a sunbeam dehydrator Pack dried tomatoes in sterilised jars with peeled garlic & sprigs of fresh rosemary. Fill jar with olive oil - resist eating them for at least 2 weeks so the flavours blend.

I will take on his Pass it on challenge & via blogging will pass on what works for me in cooking for a family of four including cooking with severe food allergies, preserving, budgeting, menu planning, packed lunches, stockpiling, buying in bulk, vegetable gardening, raising our own chickens, raising our own sheep, keeping a home and living within your means.
I am going to try to blog basics as if the readers have limited knowledge - as Jamie says - passing it on.
I cook on a budget - but we eat very well! I cook from scratch with only using a few canned ingredients otherwise everything is fresh & from scratch. I base our meals around severe life threatening food allergies - this means I cook for certain members of the family allergic to fish, shell fish, eggs, cheese, nuts, milk, dairy, gluten & wheat.
Sounds challenging doesn't it - but I think I do pretty well. To keep me sane I have learnt to adapt meals so they are allergy free & I am not having to cook 3 different meals each night.
It does take planning - we haven't the luxury of takeaways or eating out. Plus it is a nightmare using processed food try reading back of packets - Warning - may contain peanuts or has been made on an assembly line that contains peanuts, milk, egg.........

I do not have a dehydrator, but those tomatoes sound absolutely gorgeous!
I need a dehydrator! Time to trawl Trademe, I think...
