I am back

I really appreciate now how hard it must of been for Jamie Oliver Pass it on folks - looked easy sitting in the chair watching TV. I have even missed 4 weeks of my gardening class due to LIFE - and really struggled to find time to blog recipes to pass on - and that is not even having to physically leave my home to share with people.

This is what we had for dinner last night while watching NZ elections - I wish I had professional photographers for the photos & that I wasn't in a rush to dish up & hand out hot, presentation is something I could work on I think GRIN.


Fresh salad
chicken nibbles
Baked kumera (this one is an organic Maori one I think - it was awesome, gold on outside & purple on inside)

To bake the kumera. I wash well then prick all over with a fork - place in oven dish pour some olive oil over & coat - salt n pepper & bake in oven - gosh about 2 hours on med heat. - or until soft to touch. Then cut open & put sour cream in middle to serve. If wasn't in a rush I would of also put some cooked bacon crumbs & spring onion on top too. For family members allergic to sour cream - they have butter substitute - olivani in our home salt n pepper.

Chicken nibbles are cheaper to buy frozen than fresh & such a hit with kids friends. As the norm I have no measurements.
Chop up about 4-5 cloves garlic - more/less to your taste.
a good couple squirts of soya sauce

a good couple of squirts of chilli sauce.

You need enough to cover chicken nibbles - but not so they are swimming in it.

Salt n pepper

Bake in oven until cooked turn to get all sides crispy.
I baked mine about 1 1/2 hours at 160 deg c

Salad
My salads are always what ever I have got. Last nights was organic lettuce, grated carrot & beetroot, cubed cucumber & an avocado. I don't like dressings so normally we have none - this works well for us allergic people.
