making an omelet

Brent SUGGESTED an omelet for his breakfast. - Served with freshly squeezed orange juice as we have soo many oranges in organic delivery.

I use an iron pan place a nob of butter in pan & heat
Whisk 3 eggs - prepare filling. - eg cheese, tomato, ham, parsley & chives.
Salt n pepperTop egg mixture into hot pan - turn pan down to 3/4 - but this depends on your stoves heat - an omelet is quick to cook.
With spatula tip pan towards you & push away mixture with spatula - hard to get photo of this action - but it get the running part to come towards you to cook. I think this is the key to making a good omelet


When runny mixture nearly all gone - but a bit before - add your toppings.Then fold over in the pan - flipping it over will keep cooking the topping.

Then slide onto your plate. - A quick breakfast or easy meal (if you like eggs GRIN)

I always try to make omelets.. instead they always just end up being scrambled eggs with stuff in them...
